We walked into this place hoping to get some authentic Xi'an food. For those who are noticing the pop ups of many Xi'an places and wondering what the words Xi'an means. Xi'an is a city in China famous for the Liang Pi which literally translate to cold noodles, the Rou Jia Mo which also directly translate to meat sandwiches and Biangbiang noodles.
Out of the famous eats, we ordered the Liang Pi (cold noodles), meat sandwiches with beef fillings. Additionally, we ordered the Chinese pancakes, hand-pulled beef noodles (not the biangbiang noodle) and some dumplings.
The food, overall, is pretty good. And, the portion is really good for the price which is a plus. I would highly recommend the cold noodles because the flavor was really on point after mixing. The beef sandwiches were also really juice and in big portion. Who doesn't love good value?
The beef noodles has a pretty light, not too heavy flavor with many beef cubes in it (more than you expect). The type of noodles was like a piece a piece instead of the normal long noodles.
The least favorite dish out of the ones we ordered the Chinese pandcakes; it really didn't have much flavor. It would have been nice if it had some green onions or spicy sauce. It wasn't particularly crispy either--just soft dough cooked.
Tldr: would really recommend the cold noodles and the beef or pork sandwiches. Portions are big relative to its price. Want to come back and try the biang biang noodles next time. -

I can't believe I finally had the opportunity to go to a Xi'an noodle house!! Ive heard so many great things!
When we first entered, the restaurant was fairly empty with one other family eating and one server that immediately pointed for us to come sit. He didnt speak to us that much the whole time, but regardless we were so excited to eat! I ordered the (B3) hand shaved noodle in spicy pork soup and (C6) hot oil seared biang-biang noodle.
We we're fairly dissatisfied with the flavor and taste of the soup and noodles. It seemed overly salted but not flavorful at the same time. However, the texture of the noodles were delicious!
This may be a new owner because when I requested to order items that other yelpers recommended, he shared that those items were no longer available and this was a new restaurant.
Others that I came with assured me that the experience at the Xi'an restaurant is completely different!
Sadly, will likely not be returning. But, if you decide to go with a group, i would recommend trying the big chicken plate! That was ordered frequently while were were there and smelled good! -

When you walk in, you feel a sense of good energy and guys, that's very important to many people. The place looks simple but well put-together. They greet people with a smile and without skipping by asking "how many are in your party"?
It was almost full when I came here with hubs. We made a pack that we're going to try new places. This was our first time here. The menu has plenty of pictures that will make you salivate. Also, they make their own noodles. Wow, that's a nice touch wouldn't you say!? But only they use these noodles for certain types of soup. They also serve flat noodles that don't have soup as well as cut noodles meaning, you won't have to twirl your chopsticks or forks to get a good bite .
So, I thought and I will say again, i made it a thing that when I come in to a new place and they serve one dish that is serve all around, that would be my order. This is my way to know whether I will do a second time trip.
I decided on the Braised beef noodle soup. It smelled so good and appeared to be very light. The broth is almost clear. Braised beef are cut in big cubes, bokchoy are in the mix and, with their own handmade noodles. I enjoyed all that including the broth but I will skip this noodles. It was kind of starchy and bland. I made some adjustments to make it tasteful enough. I like big flavors and I mean big flavors that screams"I am made to perfection so, eat up!"
For example, if you make Pad Thai? It better taste, smell and present it like so. I never mind paying extra for my meals especially if it's going to make me happiest. I took some photos and you foodies might be able to tell what I am rambling about. For now, I'm giving it 3 stars because I'm not there yet to say I'm a fan. Hopeful for another time. I suppose I could come back and eat some other type of noodles dish or something other than noodles or what I tend to eat when I go out. This place have dishes that are very well liked as well as being very reasonably cheaper than other places in Edmonds.
Overall, it was a good experience and I will give this place another try since they are fine people. Check it out when you are in the area. Also, please do share your experiences. It's always nice to see an honest good review. -

Cheap joint but food is so so.
Liang Pi (cold noodle) didn't have tofu gluten(kao fu), only had cucumber.
Biang biang noodle is good in terms of the flavor.
Beef soup noodle is so oily. There's a lot of oil floating on top so only ate the noodle and beef and left all the soup. -

They have the best soup ever. It's so full of flavor and the hand pulled noodles are exceptional.
